Sweet Snack Sunday ~Vegetarian Baby Quiches

This will be my last post about Valentines food.  I promise, but this heart shaped silicone pan needed to be used at least once before February 14th.

  Did you ever see the episode of My Name is Earl where Joy made "little baby queeshes?"  That is exactly what I made this week for Patrick's lunch snack.


you will need:
Pie crust
4 eggs
1 tsp. Mustard
1 tsp. Italian seasoning 
1/2 small onion
2 Morning Star breakfast sausage patties
2 oz. frozen spinach
8 oz. Cream Cheese



Dice up the half onion and saute in a pan with a little oil.  Crumble up the Morning Star patties and combine with the eggs, mustard, cream cheese, spinach and seasoning.  When the onion has finished cooking, add it to the mixture.


Use a cookie cutter to cut circles (or hearts if you're using a tray shaped like mine) from the pie crust and place them in the bottom of your muffin pan.  Pour the mixture in.


Bake at 350 degrees for twenty five minutes. Makes about 18 little baby queeshes (6 servings)
